The impressive Jabiru, a South American stork bird, feels extremely at home in this tropical place. It is he who gives our rarity its sonorous name and who can be observed here, while coffee is being grown, in sociable groups near the waters.
What is unusual in local coffee cultivation is that the coffee cherries are only picked by hand at the very last ripening point - when they glow red wine-colored. Then the cozy warmth of the sun ensures the traditional and natural drying of the cherries. Every centimeter of sunshine is used, as the sunshine in the mountainous and shady area is extremely limited. The drying of the coffee cherries takes place on roofs, small terraces and flat hills, whereby they are turned by hand to ensure even drying. Thanks to this passionate dedication, the coffee cherries can develop their chocolaty taste, which knows how to inspire every connoisseur.
